It's so cold, that the liquid soupy diet seems to be in the lead. The other day I made this ridiculously easy soup after I saw it in an episode of Nigella. God bless Nigella and all the yummy stuff she makes. The soup is not slimy at all, it's just named after slime by her kids because of the colour.

Slime Soup (Pea and Mozzarella Soup)


Ingredients:
4 cups of frozen peas 
1 scallion
3 cups of  boiling water, from kettle
Chicken/vegetable stock concentrate or a stock cube
1 ball mozzarella, diced

Method: 
Cook the frozen peas and scallion in the boiling water with the stock concentrate, to taste, or the stock cube until tender and cooked through. Drain and discard the scallion. Blend the peas with the diced mozzarella ball until smooth.
