I am finally winning the war on the flu. Hooray for me. Had a mini celebration tonight by cooking an honorary feast to celebrate! Here is a wonderful recipe, I revamped. I originally saw this on the Food Network. To see the original recipe go here. So here's my take on it (my version makes enough for two):

Lemony Prawn Pasta with Roasted Broccoli 


Ingredients for pasta:
3 Garlic cloves
1 Lemon, zested and juiced
A Glug of Olive Oil (I don't know how much I used, lets say about 2Tbs)
A good sprinkle of red chilli flakes (again, not too sure how much, stop adding when you think it will burn your head off)
Salt and Pepper
3/4 of a pack of fresh pasta ( I used Fettucine)
A small blob of butter
A handful of roughly chopped parsley

Ingredients for broccoli:
2 cups of broccoli
Olive Oil
Salt and Pepper
Parmesan Cheese

Method:
In a bowl combine the following: garlic, lemon(zest of whole lemon and juice of one half), olive oil, chilli flakes, prawns and salt and pepper. Set aside.

Wash and dry the broccoli. Lay broccoli over a baking sheet. Drizzle with olive oil and season with salt and pepper. Give 'em a little rub so they are evenly coated. Bake at 220 degrees Celsius for 10 minutes.

Cook pasta until al dente. Save about 1/2 cup of the pasta water for the sauce.

Turn the broccoli over to brown evenly. Grate some parmesan over them and return to bake for a further 5 minutes.

Heat a pan and cook the prawns until caramelized. Remove the prawns from pan and pour the remaining prawn marinade and the pasta water into the pan. Let the mixture simmer on a medium heat and reduce. Add the parsley, butter, remaining lemon juice and zest and stir to combine. Adjust seasoning with salt and pepper. Toss pasta and prawns into sauce. Et Voila!

Serve with good wine and a dessert of Woolworths Honey Comb Crunch.
